Here is the video of Jo in the pool that I tried to post last night...
Today Jo took a ... wait for it ... A TWO HOUR AND 15 MINUTE LONG NAP! That is correct! You heard me right, 2 hours and 15 minutes! She woke up after an hour but I just happen to be in the bedroom getting something when I saw her start to move so I put the binkie in her mouth before her eyes even opened and just to make sure I picked her up and rocked her for 10 minutes to make sure she was asleep real good haha I put her back down and she slept for another hour and 15 minutes! I couldn't believe it! At one point I was walking through the house, going through every room, thinking to myself 'what should I do...?'
In other news, I am very proud of myself! I have gotten sooo into cooking. I've been cooking a meal every night for about 2 months now, except for on nights where we have enough from last night to have left overs. Well, tonight I made a very delicious pot roast in my slow cooker! I've never even had pot roast before, nevermind cooked one, but it came out so well! Everyone gave me rave reviews and I was very happy =) But the best part was... I decided to make a stir fry (basically my favorite thing to cook) with a bunch of left over veggies that were in the fridge. Since I am very big on not wasting a single morsel of food, I was very happy to see it all go to good use. Most of this stuff was left over from the veggie platter at Jo's birthday party... it had snap peas, broccoli, carrots, green peppers, and onions. If you know me, you know I LOVE vegetables. I could have eaten ALL of this no problem... it looked so good to me I had to take a picture after I put it all in the pan together.
I know, I know. This was a very interesting, exciting post haha but I didn't take any pictures today! It was one of those rare days!

POT ROAST! Good for you - mine never turn out good, so you have to post the recipe! I love veggies and would pick them over fruit any day! Looks good! I love the video of Jo - she is absolutely adorable! I'm sure I haven't said that enough!
